Why not try nuts and save an animal in the process?! These meatballs are great on pasta, wraps, stuffed peppers, stuffed mushrooms, or stuffed zucchini!
Ingredients
1 1/2 cup walnuts
2 cups cooked brown or green Lentils
1 tbsp avocado or grapeseed oil
1 tsp salt
1 tsp cummin
1 tsp thyme
A dash of hot chili or cayene pepper
Preparation
Step 1
Warm oven to 380 F. Mash lentils in a bowl.
Step 2
Blend walnuts in a blender and "crush" them (don't overblend to powder - keep small pieces of walnuts). Add to lentils.
Step 3
Add all other ingredients to bowl. Mix with fork.
Step 4
Form balls and warm in the oven (380 F) on a baking sheet for 10 - 15 minutes.
